Question about Wifi Bee / XBee

Good day,
I've been reading up and playing around with the ESP8266 Wifi Bee, which I programmed through an XBee shield plugged into an Arduino Uno. I can make a TCP connection to a server, and also receive data to turn on the pin 13 LED.
I am trying to understand what gets programmed when I upload the sketch - is it lying on the Wifi Bee, or the Arduino UNO? I would like to now use the Wifi Bee without the XBee shield on another Arduino - and eventually have two Wifi Bees talking to each other.
If someone could illuminate the architecture for me, that will be great!!
