SEN0500 environmental sensor with 3.3V Pro Mini or Adfruit HUZZAH ESP32

Will this sensor work only with the FireBeetle ESP32 or will it work with ESP32 boards from Adafruit.com, for example, or even with boards without WiFi like a 3.3 V Pro Mini? If it will work with these other boards, do I need a different software library??

It works with other ESP32 boards as well. You don't need different software library to make it work.
