Turbidity Sensor in oil

It is designed and calibrated for water. You will not likely get a right result if you immerse it in oil.

The sensor uses infrared light to determine how dirty the water is based on the amount of light transmitted. Theoretically, it is also possible to measure the dirtiness of oil, except that the transmittance of light is different between oil and water, so this may lead to inaccurate measurements.

This sensor uses infrared for measurement and cannot be used in soil.
And I think there is no concept of turbidity in the soil.
