Is there any way to change the address of the probe on the IIC bus? I had wanted to use two of these on my pool heater: one to monitor the pilot light and one to monitor the main burner, but it appears I am limited to only using one? Are there interface boards available with addresses other than 0x10?

Thank you very much for the information you have provided.
After we reviewed your pictures, we suspect that the metal shielding of the sensor probe cable is being interfered with.
This would cause the readings to be off if you have induced electricity in the metal ** of your oven. You can try the following to improve this:
1. Check that the metal enclosure or the oven as a whole is not grounded.
2. Put a separate wire from the shield to ground.
3. Wrap the probe cable directly with insulating material to avoid direct contact of the metal shield with other metals.

When the sheath touches the stove the temperature readings are wrong.

Hello, I just hooked this up and it seems to read room temperature just fine, no problems. The issue I am running into is when the insulated wire on the probe touches the metal on the stove, the temperature scrambles and returns bad data. This probe will basically be useless in this scenario as it won't read a temperature when the probe is in the oven. Any suggestions? Thank you.

Can I use 1 FireBeetle 2 ESP32-E to measure these 4 sensors and use I2C multiplexer (https://www.dfrobot.com/pro...

This is just a sensor that output IIC data.
If you want to transmit the data through WIFI, then you might need a microcontroller board with WiFi module.
Such as ESP32:

Question on the material of the probe wire. How much temperature can that wire withstand?

The link to LAYOUT WITH DIMENSION is broken. Can you update it? Is it posssible if I use k-type thermocouple from other manufacturer because I need a longer probe (5 meter wire)?

Cool application! The I2C address of this product is fixed. But the I2C Multiplexer will help you solve this problem. Please refer this link:https://www.dfrobot.com/wik...
The I2C multiplexer will be on sale after few days.
